It’s always useful to have a few quick salads in your repertoire to jazz up some meat or fish on a busy weeknight and this salad is about as easy, quick and tasty as they come. You can have this on the table within five minutes and there are endless ways you can mix it up or make it into a more substantial meal on its own.
Simply combine chopped kale, olive oil and lemon juice and a sprinkling of salt, give it a bit of a massage – this helps to break down the cells and makes the kale really soft, silky and easier to digest. Plus I find it pretty therapeutic… is that weird?
Anyway, this salad is great as a burst of green goodness at a BBQ or when you need a quick and healthy option for a BYO dish.
To add a bit more substance to this salad I often add a tin of rinsed chickpeas, some cooked buckwheat or leftover brown rice, plus chopped olives or capers for a zingy burst or shredded sundried tomatoes. This also works well with a thick spread of hummus and mashed avocado in a wrap – the most delicious two minute lunch!

Quick kale salad – makes enough as a side for 4, or serves 2 very hungry people
1 medium head of kale, leaves removed from the stalks and shredded*
1 tablespoon good extra virgin olive oil
Juice of half a lemon
Pinch of salt
Optional: cooked chickpeas, buckwheat, rice, olives, capers, sundried tomatoes
Pop your kale, olive oil, lemon juice and salt into a large bowl.
Start to massage the kale and within 10 seconds or so it should turn a very dark green and start to release a little moisture.
Keep massaging for around a minute until soft and silky – get stuck in there!
Season with a little freshly cracked black pepper.
Add any optional extras; cooked chickpeas, buckwheat or rice, olives, capers or sundried tomatoes
*You can keep the stalks to help flavour a veggie stock.
